Steak tartar with king prawns and tarragon sauce

Traditionally, by the name of steak tartar we refer to a dish, made with raw beef, flavored with herbs and other ingredients. This type of dish is also delicious with seafood, as we propose you to try in this recipe with king prawns and tarragon sauce. A second course, with which we certainly succeed when we have guests.

Chop the onion
Chop the onion very finely and put it aside.

In a glass blender, we put 250 ml of oil, a pinch of chopped tarragon, vinegar, 50 grams of caviar substitute and mustard and we grind everything.

We put an egg yolk in a bowl and we slowly add the oil, while we slowly mix the sauce with the help of a whisk and we put it aside.

Prepare the mixture
Put in a bowl the chopped king prawns, onion, 30 g of caviar substitute, egg yolk, the egg yarn, chopped chives, salt, white pepper, 50 ml of olive oil and mix everything well.
