Grilled scampi with mousseline of garlic

In just fifteen minutes, we can prepare delicious grilled scampi with mousseline of garlic, a second course that will delight our guests. One of the keys to success in this recipe is mousseline, a variety of a sauce, ideal to accompany the vegetable dishes, fish or seafood. In this case, we propose to prepare it with a garlic taste, which combines perfectly with the sea taste of scampi.



  • 1 box of scampi 1kg Grand Krust,
  • salt,
  • pepper,
  • 1 egg,
  • 2 cloves of garlic,
  • 200 ml olive oil,
  • 50 g whipped cream
  • Note: If we want to make this recipe for eight guests instead of four, we just have to double all the needed ingredients.

Peel the garlic
Peel the garlic and blanch for 2 minutes in boiling water.

Grind the garlic
Grind the garlic with the oil.

Prepare the aioli (the garlic sauce)
Put the egg yolks in a bowl, spice it and continue adding slowly the oil with the garlic, while we add with wire whisk until the oil finishes and we get an aioli.

Mix the garlic sauce with cream
Slowly mix the garlic sauce with whipped cream and put it aside..

Prepare the scampi
Cut them lengthwise in a half, spice it and fry it in a pan with a few drops of oil for a minute, just on the skin side.

Divide the garlic mousseline
Put the scampi on a baking tray. With the help of a spoon, we put the sauce it over the scampi.

Grill the scampi
Grill the scampi in the oven over the highest temperature until they take color.
