  • 1 shallot
  • 1 tablespoon of tomato sauce
  • ½ tablespoon of sweet paprika
  • a pinch of spicy paprika
  • 3 almonds
  • 50 ml of fish stock
  • salt

Heat the grill sauce in a pan; gently fry the chopped shallot until it begins to turn golden.

Season the squid and add them to the pan; cook them on both sides.

Add the spices. Continue to gently fry for a couple of more minutes. Take care that the paprika doesn’t burn. Add the tomato sauce and let it concentrate as it simmers.

While the sauce is cooking, put the fish stock and the almonds in an electric blender and mix well; then add them to the sauce. Let everything simmer for 15 more minutes; you’re then ready to enjoy squid a la americana.
