Clams in green sauce

Step by Step of Recipe

Purge the clams
If the clams are not purged, we can eliminate the sand by putting the clams in a bowl of water and adding two tablespoons of salt. Put them in the fridge and, in a couple of hours, they will be ready to be used.

Grind parsley
Put the parsley in a bowl with the fish broth, we crush it and put aside.

Prepare the sauce
In a large pan with a few drops of oil, we put a chopped onion and sauté it till it becomes soft, but without allowing it to get browned. Add the minced garlic and continue to sauté for a few minutes.

Add the flour and green sauce
Add the flour and fry it all together one minute more, stirring constantly.
Add wine and green sauce that we have put aside before.
Finally, add the fish broth and wait till it boils.

Open the clams
To open the clams, just a use of heat is required. In this case, we add directly the green sauce and stir everything carefully.
