Ingredients

FOR 4 PEOPLE

  • 1 box of Argentinean red shrimp 800g Grand Krust
  • 1 tablespoon of green peppercorns
  • 250 ml of cooking cream
  • ½ cup of brandy
  • salt
  • olive oil

Step by Step

Peel the shrimp without removing the head or tail. Season them. Sear them in a bit of olive oil in a pan. Set aside.

Put some green peppercorns in the same pan. Fry the peppercorns for a few seconds.

Flambé with brandy until the alcohol evaporates. Then add the cream. Let the cream reduce to thicken the sauce.

Plate and serve
Plate the shrimp, salt to taste and top with the sauce.

Tips Practical Advice

If you don’t have green peppercorns, you can use chopped tarragon instead.
