Catalan pizza with grilled vegetables, shrimp and garlic sauce

Catalan pizza, coca, can be made sweet or savory from all kinds of ingredients. It’s a typical food in Catalunya, Valencia, Aragon and the Balearic Islands. It’s easy to make and it’s always delicious. In this recipe, we suggest using grilled vegetables, shrimp and garlic sauce, but it’s great with other seafood, too.

Ingredients

FOR 4 PEOPLE

  • 1 pack of Shrimp with garlic sauce 160g Seafood Combo by Grand Krust
  • 1 red pepper
  • 1 aubergine
  • 1 onion
  • black olives
  • 500 g of flour
  • 30 g of compressed yeast
  • 300 ml of water
  • olive oil
  • salt

Step by Step

Grill the vegetables in the oven at 200ºC for 30 minutes.

Put the olives in the microwave for 5 minutes at full power. When finished, remove the olives from the microwave and chop them up.

To make the dough, put the flour in a bowl with a pinch of salt, a splash of oil, the chopped olives, the yeast and lukewarm water. Work the dough until it’s smooth. When it’s ready, place the dough in a bowl and cover it with cling film. Let it sit until it grows in size.

Heat the garlic sauce in a pan and when it’s hot, sauté the shrimp and set them aside.

When the 30 minutes have elapsed, remove the vegetables from the oven and let them cool long enough for them to be handled without burning yourself. When they’re ready, peel them and cut them into strips.

Take the dough and dust the countertop with flour. Roll out 4 pieces and put them on a baking tray.

Spread the vegetables on top of the pizza base and the shrimp on top of the vegetables.

Drizzle the pizzas with the garlic sauce and bake them at 170ºC for 25 minutes. Remove the pizzas and serve.
